You'll find spring rolls on East and Southeast Asian menus, including Vietnamese and Cambodian restaurants, and they're usually served with a dipping sauce. Fried spring roll wrappers are made from flour and water, and after being deep fried the rolls are hot and crispy. Fresh spring rolls are served cold, with vegetables, shrimp, or tofu enclosed by soft rice paper. The tasty treats get their name from the tradition of filling them with vegetables newly harvested in the spring.
