When food is braised, it's cooked in a small amount of oil and then steamed in liquid. Braised meat and vegetables are tender and delicious.

Braising is a cooking method that works especially well for a tough piece of meat or a dense root vegetable. The low heat, rich liquid, and long cooking time make braised foods extra tasty. In many East Asian cuisines, braised pork and beef are cooked in broth and soy sauce. In the U.S., many Americans are familiar with braised pot roast. Braised comes from the French braiser, "to cook over live coals."
